Ingredients

60g NutriSoy Fresh Soya Milk (Oats & Quinoa)

200g enoki

150g firm tofu

20g water

1 tbsp peanut butter

1/4 tsp salt

1 tbsp roasted sesame seeds

Unsweetened soy milk option: 80g NutriSoy Fresh Soya Milk No Sugar Added (no need to add water)

 

Preparation

  1. In a blender, blend tofu, NutriSoy Fresh Soya Milk with real Oat & Quinoa, peanut butter, sesame seeds, salt, and water until smooth.
  2. Trim off the root ends of the enoki mushrooms and rinse them thoroughly.
  3. Blanch enoki in boiling water for 1 min, then rinse in cold water.
  4. Pour chilled sauce over enoki. Garnish with sesame oil, pepper & more sesame seeds.
