Ingredients

1.5L Water

1kg Beef

2 tbsp Ghee

4 tbsp Cooking oil

2 tbsp Kerisik

1 no Potato, rough chop

250g Bamboo Shoot, sliced

50g Gula Melaka

a/n Salt

½ tin F&N Evaporated Filled Milk


Spice paste (to blend)

1 no  Red onion

12 nos Garlic

4 inches  Ginger

3 tbsp  Boh chili


Aromatics spice

4 stalks  Curry leaves

2 sticks Cinnamon stick

3 nos  Star anise

4 nos Cardamon

1 tsp Black pepper


Spice powder mix

25g/2.5 tbsp  Beef or chicken curry powder

20g / 2 tbsp Chili powder

5g/ 1 tsp Fennel seed powder

5g/ 1 tsp Cumin powder

5g/ 1 tsp  Coriander seed powder

Preparation

  1. Boil the beef together with water in a pot, lower down the heat to simmer and let it cook for 1 hour 30 minutes. Strained the beef, reserve the beef stock. Set aside.
  2. Heat up a wok, add in ghee and oil. Sauté the aromatic spices and then add in all the spice blend, saute until the paste split from oil. Add in spice powder mix, saute for 2 minutes.
  3. Add in potato, bamboo shoot, strained beef and the beef stock. Let it cook for 3 minutes and season with kerisik, gula melaka, and salt.
  4. Lastly add in F&N Evaporated Filled Milk, cook it for 3-5 minutes until the sauce slightly thickens.
  5. Dish out, garnish with sliced green chilli. Serve immediately

1kg Daging

2 sudu besar Minyak sapi

4 sudu besar Minyak masak

2 sudu besar Kerisik

1 biji Kentang, potong kasar

250g Rebung, dihiris

50g Gula Melaka

Secukup rasa Garam

½ tin Susu Isian Sejat F&N


Pes rempah

1 biji  Bawang merah

12 ulas Bawang putih

4 inchi  Halia

3 sudu besar  Cili Boh


Rempah aromatik

4 batang  Daun kari

2 batang Kulit kayu manis

3 biji Bunga lawang

4 biji Buah pelaga

1 sudu kecil Lada hitam


Spice powder mix

25g/2.5 sudu besar  Serbuk kari daging

20g / 2 sudu besar Serbuk cili

5g/ 1 sudu kecil Serbuk jintan manis

5g/ 1 sudu kecil Serbuk jintan putih

5g/ 1 sudu kecil  Serbuk biji ketumbar

Langkah-langkah

  1. Rebuskan daging bersama air dalam periuk, kecilkan api sehingga mendidih dan biarkan masak selama 1 jam 30 minit. Tapiskan daging, simpankan stok daging.
  2. Panaskan kuali, masukkan minyak sapi dan minyak masak. Tumiskan rempah aromatik, kemudian masukkan semua bahan-bahan kisar. Tumiskan sehingga pes pecah minyak. Masukkan campuran serbuk rempah, tumis selama 2 minit.
  3. Masukkan kentang, rebung, daging yang ditapis dan stok daging. Biarkan masak selama 3 minit dan masukkan kerisik, gula Melaka dan garam.
  4. Akhir sekali, masukkan Susu Isian Sejat F&N, masak selama 3-5 minit sehingga menjadi pekat.
  5. Tutupkan api, hiaskan dengan hirisan cili hijau. Sedia dihidang!
