Ingredients
1 nos Ikan patin, 1.5-2kg
100gm Tamarind paste, to clean fish
250gm F&N Evaporated Filled Milk
Add all Pais paste (refer below)
250gm Tempoyak paste
30gm Daun Kesum
6gm / 1 tsp Sugar
6gm / 1 tsp Salt
2 nos Banana leaf
Pais Paste
30gm / 4 inch Fresh turmeric
7 nos Red eye chilies, red
5 nos Red chili
150gm / 3nos Red onion
30gm / 5 pcs Lemongrass
30gm / 2tbsp Cooking oil
Methods
- Blend all the pais paste ingredient into paste. Except for cooking oil.
- Heat the pot with cooking oil. Sauté the spice until fragrant. Add tempoyak paste, daun kesum, salt, sugar and F&N Evaporated Filled Milk.
- Place the patin fish on banana leaf and spread the paste on top. Seal the whole fish with aluminium foil. Bake in a preheated 165C oven for 30 minutes.
- Take it out from the oven and serve immediately.

250gm Susu Isian Sejat F&N
Gunakan semua Pes pais (rujuk dibawah)
250gm Tempoyak
30gm Daun Kesum
6gm / 1sudu kecil Gula
6gm / 1sudu kecil Garam
2 helai Daun pisang
Pes Pais
30gm / 4 inci Kunyit hidup
7 batang Cili padi merah
5 batang Cili merah
150gm / 3 biji Bawang merah
30gm / 5 batang Serai
30gm / 2 sudu besar Minyak Masak
Cara memasak
- Kisar semua bahan menjadi pes. Kecuali minyak masak.
- Panaskan periuk dengan minyak masak dan tumis pes hingga naik bau. Masukkan tempoyak, daun kesum, garam, gula dan Susu Isian Sejat F&N.
- Letakkan ikan patin di atas daun pisang dan sapukan pes di atas. Balut dengan aluminium foil.
- Bakar dalam ketuhar selama 30 minit pada suhu 165c sehingga masak.
- Keluarkan dari ketuhar dan hidangkan segera
