Ingredients

200ml of NutriSoy Fresh Soya Milk with No Sugar Added

1 Small Yellow Onion(optional)

1 tbsp of Chopped Garlic(optional)

240g Canned Chickpeas

120g Kidney Beans

3 Medium Size Tomatoes/15 Cherry Tomatoes

1 tsp Tomato Paste

200ml Vegetable Stock

Cornstarch(to thicken stew)

1 tbsp of Lemon Juice

Basil(optional for Garnish)

 

Preparation

  1. In a heated pan over medium heat, sauté the onions until softened, then add the tomatoes and cook for about 3–5 minutes.
  2. Add in the garlic and tomato paste and cook in till fragrant.
  3. Stir in the broth and beans, then bring to a simmer. Cover and cook for 5 minutes.
  4. Add in NutriSoy Fresh Soya Milk No Sugar Added and then bring to a boil.
  5. If the stew is too watery, thicken it with a cornstarch mixture.
  6. Turn off the heat and add the basil.
  7. Season to taste with salt, pepper, and lemon juice.
  8. Serve alongside a mixed salad or slices of toasted bread.
