Ingredients
250ml of NutriSoy Fresh Soya Milk No Sugar Added
½ Yellow Onion
300g Tteokbokki
1 tbsp of Chopped Garlic
2 tbsp of Gochujang(Chilli Paste)
1 tbsp of Gochugaru (Chilli Powder) – optional
1 tbsp of Soy Sauce
1 tbsp Sugar
2 Stalks of Spring onion
500ml of Water
Preparation
- Soak tteokbokki in water for 10 mins
- Slice the onion thinly and cut the spring onion into 2 cm lengths, separating the white and green parts.
- Heat a deep pan over medium heat and add oil.
- Once the pan is heated, add the onion, white parts of the spring onion, and garlic. Stir-fry for about 1 to 2 minutes until fragrant.
- Add to the pot the gochujang, gochugaru, soy sauce, sugar and water.
- Stir to mix well and bring liquid to a boil.
- Drain tteokbokki and add into the pot.
- Cook for about 10 minutes, or until the liquid has reduced to a sauce.
- Add in NutriSoy Fresh Soya Milk with No Sugar Added and ring to a simmer (about 5 minutes), then add the green parts of the spring onions.
- Serve and enjoy!
