Dry ingredients

240gm Cake flour

10gm Baking powder

½ tsp  Salt

60gm Sugar

Wet ingredients

240gm F&N Evaporated Milk

3 nos  Egg

120ml Pandan juice

120ml Vegetable oil

Pandan juice

8 nos Pandan leaves, cut into small pieces

120ml Water

Buttercream

120gm Margarine, soften and room temp

170gm Powder sugar

Gula melaka syrup

200gm Gula melaka, grated

5 tbsp  Water

1 nos Pandan leaf (optional)

Methods

  1. In a bowl, sift together all dry ingredients. Set aside.
  2. For the pandan juice blend the ingredients together, strain the juice, set aside.
  3. In another bowl, whisk all the wet ingredients. Mix until smooth.
  4. Gradually add the dry ingredients into the wet ingredients, stir until just combined. Be careful not to overmix.
  5. Place the mixture into a 6x6 cake pan or mold into the steamer. Cover and steam over medium-high heat for about 1 hour 20 minutes or until a toothpick inserted into the center comes out clean.
  6. Once cooked, allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  7. For the gula melaka syrup, place everything on a small pot, cook on low heat until all the gula melaka dissolved.
  8. Once the side of syrup starts to bubble remove from the heat.
  9. For the buttercream, beat the margarine and sugar until light color and fluffy.
  10. Slice the cake into 2 layers and pipe the buttercream between layers. Drizzle the gula melaka syrup on top of the cake. Enjoy!

240gm Susu Isian Sejat F&N

3 biji  Telur

120ml Jus pandan

120ml Minyak sayuran

Jus pandan

8 helai Daun pandan, dipotong halus

120ml Air

Buttercream

120gm Margarine, suhu bilik

170gm Powder sugar

Sirap gula melaka

200gm Gula melaka, disagat

5 sudu besar  Air

1 helai Daun pandan

Cara memasak

  1. Didalam mangkuk, ayak ke semua bahan kering. Biarkan seketika.
  2. Untuk jus pandan, blend bahan tadi dan tapis jusnya, ketepikan.
  3. Dalam mangkuk lain, pukul semua bahan basah. Gaul hingga rata.
  4. Masukkan sedikit demi sedikit bahan kering ke dalam bahan basah, kacau hingga sebati. berhati-hati agar tidak terlalu lama.
  5. Masukkan adunan ke dalam loyang kek 6x6 atau acuan ke dalam pengukus. Tutup dan kukus dengan api sederhana tinggi selama kira-kira 1 jam 20 minit atau sehingga pencungkil gigi yang dimasukkan ke dalam bahagian tengah keluar bersih.
  6. Setelah masak, biarkan kek sejuk di dalam acuan selama beberapa minit sebelum dipindahkan ke rak dawai untuk sejuk sepenuhnya.
  7. Untuk sirap gula melaka, letak kesemua bahan di dalam periuk kecil, masak dengan api perlahan sehingga semua gula melaka larut.
  8. Setelah bahagian sirap mula berbuih, padamkan api.
  9. Untuk buttercream, pukul marjerin dan gula hingga warna cerah dan kembang.
  10. Potong kek kepada 2 lapisan dan paipkan buttercream di antara lapisan. Siramkan sirap gula melaka di atas kek. Nikmati
