Ingredients
350g boiled cockles
125ml cooking oil
150ml F&N Evaporated Milk
3 tsp tamarind juice
3 Kaffir lime leaves
Salt and sugar to taste
Mixed Spices
¼ tsp fennel powder
1 tsp coriander seeds
¼ tsp cumin powder
1 tsp belacan
Ground finely
4 tsp kerisik (dry-fried grated coconut)
3 tsp chilli paste
5 cloves garlic
8 shallots
1cm fresh turmeric
1cm ginger
1cm galangal
2 stalks lemongrass
Methods
- Heat oil and sauté ground ingredients until fragrant.
- Add mixed spices and continue to sauté.
- Pour in tamarind juice and add Kaffir lime leaves and stir.
- Add in the cockles, F&N Evaporated Milk and mix well.
- Add salt and sugar to taste.
- Cook until gravy thickens. Remove from heat and serve.
