200ml  Cooking Oil

2kg  Beef short ribs

500g  Rendang paste

200ml  Water

10 pcs  Kaffir lime leaf

6 stalks  Lemongrass

10 nos  Candlenut

6 pcs  Turmeric leaf

220g  Kerisik

75g  Gula Melaka

1 tin  F&N Evaporated Filled Milk

To taste  Salt

Rendang Paste

200ml  Cooking oil

100ml  Water

3 tbsp  Dry chili, soaked

3 nos  Red onion

7 nos  Shallot

3 inches  Ginger

7 stalks  Lemongrass, white part only

3 inches  Galangal

3 inches  Fresh turmeric

Methods

  1. In the blender, add all the rendang paste ingredients and blend until smooth.
  2. Heat the oil in the pan and sear the short rib until golden brown.
  3. Take out the short ribs, add the rendang paste, cook until split from oil.
  4. Add the short ribs, water, lemongrass, and kafir lime leaf, and cook for 1 hour and 30 minutes (45 minutes in a pressure cooker).
  5. Once the ribs are cooked, add the gula melaka, kerisik, turmeric leaf, candlenut, and F&N Evaporated Filled Milk.
  6. Let it cook until the sauce thickens.
  7. Dish out and enjoy.

2kg  Tulang rusuk

500g  Paste rendang

200ml  Air

10 helai  Daun limau purut

6 batang  Serai

10 biji  Buah keras

6 helai  Daun kunyit

220g  Kerisik

75g  Gula Melaka

1 tin  Susu Isian Sejat F&N

Secukup rasa  Garam

Rendang Paste

200ml  Minyak Masak

100ml  Air

3 sudu makan  Cili Kering, Kisar Hancur

3 biji  Bawang Merah

7 biji  Bawang kecik

3 inci  Halia

7 batang  Serai, bahagian putih sahaja

3 Inci  Lengkuas

3 Inci  Kunyit hidup

Langkah-langkah

  1. Dalam pengisar, masukkan semua bahan pes rendang dan kisar sehingga sebati.
  2. Panaskan minyak dalam kuali dan masukkan tulang rusuk sehingga perang keemasan.
  3. Keluarkan tulang rusuk, masukkan pes rendang, dan masak sehingga pecah minyak.
  4. Masukkan tulang rusuk, air, serai, dan daun limau purut, dan masak selama 1 jam 30 minit (45 minit dalam periuk tekanan).
  5. Selepas daging sudah masak, masukkan gula melaka, kerisik, daun kunyit, buah keras, dan Susu Isian Sejat F&N.
  6. Kacau sehingga sebati.
  7. Hidangkan seketika.
