400g Mee Hoon, cooked
2 tbsp Cooking oil
½ pcs Chicken, rough chop
1 stalk Lemongrass, cut into pieces
1 can F&N Evaporated Filled Milk
300ml Water
A/N Sugar
A/N Salt
Spices
1 tsp Coriander powder
1 tsp Cumin powder
4 pcs Shallots
3 cloves Garlics
1 tbsp Turmeric powder
2 inch Galangal
2 inch Ginger
2 tbsp Cooking oil
Toppings
¼ cup/ serving Bean sprout, blanch
2 tbsp / serving Fried shallots crisp
1 pcs/ serving Hardboiled eggs, halved
2 tbsp / serving Spring onions
2 wedges / serving Lime, cut to wedges
Preparation
- Blend all the spices into paste.
- In a pot, add the spice and oil, sauté with medium fire until aromatic
- Add in chicken, water, lemongrass, salt, and sugar. Bring it to a boil and simmer for 20 minutes
- Swirl in F&N Evaporated Fill Milk bring it to a boil and remove from heat.
- To assemble, add a handful of mee hoon into a bowl, add in the hot soup and cooked chicken, and all the toppings.

300ml Air
Secukupnya Gula pasir

Bahan Rempah
1 sudu teh Serbuk ketumbar
1 sudu teh Serbuk jintan putih
4 biji Bawang kecil
3 ulas Bawang putih
1 sudu besar Serbuk kunyit
2 inci Lengkuas
2 inci Halia
2 sudu besar Minyak masak
Bahan Hiasan
¼ cawan/ hidangan Tauge, direbus
2 sb/ hidangan Bawang goreng
1 biji / hidangan Telur rebus, potong setengah
2 sb/ hidangan Daun bawang
2 baji/ hidangan Limau, dipotong baji
Langkah-langkah
- Kisar semua bahan rempah menjadi pes.
- Dalam periuk, masukkan pes rempah dan minyak, tumis dengan api sederhana sehingga aromatik
- Masukkan ayam, air, serai, garam, dan gula. Didihkan dan rennehkan selama 20 minit
- Masukkan Susu Isian Sejat F&N, didihkan dan keluar dari api.
- Untuk sediakan soto ayam, tambahkan segenggam bihun ke dalam mangkuk, masukkan sup panas dan ayam dan semua bahan hiasan.
