200gm  F&N Evaporated Filled Milk

Chicken Marinates

1 Whole / 6pcs  Chicken, cut into 12 pcs / Chicken chop

100gm / 2 noss   Red onion, blend

5gm / 1 no Lemongrass, blend

12gm / 4 nos Garlic, blend

6gm / 1 tsp  Salt

15gm / 2 inch  Ginger, blend

Percik Sauce

7gm / 3 nos Dry chilies, soak

7gm / 1 inch  Ginger

100gm / 2 nos Red onion

6gm / 2 tsp Garlic

40gm / 5 nos Lemongrass

100ml Water

15gm / 1 tbsp Kerisik

2gm / 1 pcs Asam keping

3gm / ½ tsp Salt

50gm / 4 tbsp  Palm sugar

30ml /2 tbsp Cooking Oil

Methods

  1. Marinate the chicken with the blended ingredients for at least 1 hours in the chiller.
  2. Blend all the percik sauce ingredients except cooking oil, salt, asam keping and palm sugar into paste. Cook the blended paste with oil in a pot until splits from oil and add salt, asam keping and palm sugar. Stir until well mix.
  3. Add in marinated chicken in the percik sauce and cook for 30 minutes. Add in the F&N Evaporated Filled Milk. Cook for 10 minutes. Set the sauce aside.
  4. Place the chicken onto a baking tray and spread it with the percik sauce, bake it in the oven for 15 minutes.
  5. Serve the Ayam Percik with the remaining percik sauce. Enjoy.

1 Ekor / 6 keping  Ayam, potong 12 / Chicken chop

100gm / 2 biji  Bawang merah, dikisar

5gm / 1 batang  Serai, dikisar

12gm / 4 ulas  Bawang putih, dikisar

6gm / 1 sudu kecil  Garam

15gm / 2 inci   Halia, dikisar

Sos Percik

7gm / 3 tangkai  Cili Kering, direndam

7gm / 1 inci  Halia, dikisar

100gm / 2 biji  Bawang Merah, dikisar

6gm / 2 sudu kecil  Bawang Putih, dikisar

40gm / 5 batang  Serai, dikisar

100ml  Air, untuk mengisar

15gm / 1 sudu besar  Kerisik

2gm / 1 keping  Asam keping

3gm / ½ sudu kecil  Garam

50gm / 4 sudu besar  Gula Melaka

30ml /2 sudu besar  Minyak masak

Langkah-langkah

  1. Perap ayam bersama bahan kisar sekurang-kurangnya 1 jam di dalam peti ais.
  2. Kisar semua bahan sos percik kecuali minyak masak, garam, asam keping dan gula melaka hingga menjadi pes. Masak pes bersama minyak dalam periuk sehingga pecah minyak, kemudian masukkan garam, asam keping dan gula merah. Kacau hingga sebati.
  3. Masukkan ayam yang telah diperap ke dalam sos percik dan masak selama 30 minit. Tambahkan Susu Isian Sejat F&N, lalu masak selama 10 minit. Ketepikan sos.
  4. Letakkan ayam di atas dulang pembakar dan sapukan dengan sos percik, bakar dalam ketuhar selama 15 minit.
  5. Hidangkan Ayam Percik bersama sos percik. Nikmati.
