350g boiled cockles

125ml cooking oil

150ml F&N Evaporated Milk

3 tsp tamarind juice

3 Kaffir lime leaves

Salt and sugar to taste

Mixed Spices

¼ tsp fennel powder

1 tsp coriander seeds

¼ tsp cumin powder

1 tsp belacan

Ground finely

4 tsp kerisik (dry-fried grated coconut)

3 tsp chilli paste

5 cloves garlic

8 shallots

1cm fresh turmeric

1cm ginger

1cm galangal

2 stalks lemongrass


  1. Heat oil and sauté ground ingredients until fragrant.
  2. Add mixed spices and continue to sauté.
  3. Pour in tamarind juice and add Kaffir lime leaves and stir.
  4. Add in the cockles, F&N Evaporated Milk and mix well.
  5. Add salt and sugar to taste.
  6. Cook until gravy thickens. Remove from heat and serve.
