500g White fish

5 cloves Garlic (marination)

3 nos Shallots (marination)

35g Coriander leaves (marination)

3 slices Ginger (marination)

2 tbsp Lemon juice (marination)

15 nos Dry chili, soaked and deseed (marination)

1/2 tsp Cumin powder (marination)

1/2 tbsp Garam Masala (marination)

2 tsp Salt (marination)

1 tbsp Oil (marination)

1/4 cup CARNATION® Evaporated Creamer (marination)

15 nos Grapes, seedless and cut into half (chutney)

35g Coriander leaves (chutney)

1 no Green chili, deseed (chutney)

1 no Red chili, deseed (chutney)

4 cloves Garlic (chutney)

2 tbsp Lemon juice (chutney)

2 tbsp CARNATION® Evaporated Creamer (chutney)

1 tbsp Chili sauce (chutney)

pinch Salt (chutney)

Preparation

  1. Combine all fish marination ingredients in a food processor and blend until paste.
  2. Marinate the fish with the paste for at least 1 hour or best overnight.
  3. Preheat the oven to 200°C and bake for 10-15 mins.
  4. For the chutney, blend all the ingredients except for grapes in a food processor and then combine with the grapes.
  5. Serve the baked fish with the grape chutney as sides

500g Ikan berisi putih

5 ulas Bawang putih (perapan ikan)

3 biji Bawang kecil (perapan ikan)

35g Daun ketumbar (perapan ikan)

3 keping Halia (perapan ikan)

2 sudu besar Jus limau (perapan ikan)

15 biji Cili kering, rendam dan buang biji (perapan ikan)

1/2 sudu kecil Serbuk jintan putih (perapan ikan)

1/2 sudu besar Garam Masala (perapan ikan)

2 sudu kecil Garam (perapan ikan)

1 sudu besar Minyak (perapan ikan)

1/4 cawan Krimer Sejat CARNATION® (perapan ikan)

15 biji Anggur, berbiji dan potong 2 belah (chutney)

35g Daun ketumbar (chutney)

1 biji Cili hijau, buang biji (chutney)

1 biji Cili merah, buang biji (chutney)

4 ulas Bawang putih (chutney)

2 sudu besar Jus limau (chutney)

2 sudu besar Krimer Sejat CARNATION® (chutney)

1 sudu besar Sos cili (chutney)

Secukup rasa Garam (chutney)

Langkah-langkah

  1. Campurkan semua bahan perapan ikan dalam pengisar dan kisar sehingga halus.
  2. Perapkan ikan dengan perapan tadi selama 1 jam ataupun semalaman.
  3. Panaskan ketuhar kepada 200°C dan bakar selama 10-15 minit.
  4. Untuk membuat chutney, kisarkan semua bahan chutney kecuali anggur di dalam pengisar kemudian gaul sebati dengan anggur.
  5. Hidangkan ikan bakar pedas dengan chutney anggur.
